Cheesy Broccoli Bites

These little broccoli and cheese patties are more than just a mouthful. Eat them hot out of the oven for a scrumptious treat!


This is a great way to get your kids to eat veggies! You could even reduce the cheese and add in pureed garbanzo or white beans to increase the fiber and protein.


Easy to make and a hit at any get together! Enjoy!


Serves 8


Ingredients: 10 oz frozen chopped broccoli (thawed and drained) 1 c grated reduced fat Mexican blend cheese 2 eggs, whisked 2/3 c seasoned Italian bread crumbs Salt & pepper, to taste


Preparation: Preheat oven to 375 F

1. Remove excess liquid from broccoli by squeezing with a towel. 2. In a medium bowl, add all ingredients together and mix well. 3. Form small balls or patties with your hands and place on a baking sheet lined with parchment paper. 4. Bake for 20-25 minutes, turning patties after 10 minutes.

Eat while hot! Enjoy!
