Chutney Chicken

This sweet and savory chicken dish is my kids’ absolute favorite meal. To this day, they request it when they come for dinner. Of course, I like to serve it with brown rice, but they prefer steamed white rice and spoon the sauce over it. Lately I have substituted brown jasmine rice and no one has noticed, or maybe their taste buds are growing up.


Serves 6


Ingredients: 6 boneless, skinless chicken breasts* 1 cup Mrs. Ball’s original chutney 1 medium onion, chopped small 2 TBS olive oil 2 TBS Worcestershire sauce 4 TBS organic ketchup Salt & freshly cracked pepper


Preparation: 1. Preheat oven to 375F and spray a 13’ x 9” pan with olive oil spray. 2. Trim chicken breasts, dry, and put in casserole pan. 3. Mix remaining ingredients together and pour over chicken. 4. Bake uncovered for 45-50 minutes. Serve on top of a bed of rice (preferably brown rice) and steamed broccoli and carrots.


*If using bone-in/skin chicken parts, bake for 60 minutes.
