Baked Chicken Strips

These homemade, healthy chicken strips, that are high in protein and fiber, will make your children scream for more!


Serves: 1


Ingredients: 6 oz. raw skinless boneless chicken breast, cut into 8 strips ½ cup Fiber One bran cereal (original) ¼ cup liquid egg whites ¼ tsp. garlic salt Black pepper, to taste


Preparation: 1. Preheat oven to 375º. 2. Using a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Add garlic salt and black pepper to crumbs. Place crumbs in a small dish and egg substitute in another. 3. Coat raw chicken-first with egg whites and then with crumbs. Place strips on a baking pan sprayed with nonstick spray. Add a light mist of nonstick spray on top and place in the oven. 4. Cook for 10 minutes and then turn strips over. Spray with light mist of nonstick spray and cook for an additional 7-10 minutes, until chicken is fully cooked and crumb coating looks crispy.
