Summertime Caprese and Peach Salad

The summer months are the best for enjoying seasonal fruits and veggies! Ripe peaches and heirloom tomatoes are a wonderful combination for this delicious, refreshing, no-heat salad that everyone will love! It will perk up any potluck you are invited to over the Labor Day weekend! Not only does it taste amazing, but it also takes less than 10 minutes to put together.


Serves: 6


Ingredients:


3 ripe peaches or nectarines

3 heirloom tomatoes

1 ball of burrata cheese

Balsamic glaze

Fresh basil


Preparation:

  • Wash and dry all produce.

  • Slice tomatoes in 1/4" thick slices and place on a large platter. Slice peaches into thin 1/4" wedges and place on top of tomatoes.

  • Break the burrata with your hands and scatter on top.

  • Top the platter with julienned basil or put clusters of basil leaves to decorate.

  • Drizzle with balsamic glaze.

  • Enjoy!


Notes:

  • Peaches or nectarines - no need to peel - you could grill them, but if they are sweet and ripe, why bother

  • Heirloom tomatoes - buy varying sizes and colors to make the salad more interesting - reds, green, and yellow would make a beautiful salad

  • Balsamic glaze - I like the Trader Joe's balsamic glaze, but you could cook down balsamic vinegar to thicken it up

  • You could add extra virgin olive oil, but why add extra calories when you don't need to?

  • Optional additions: grilled shrimp or prosciutto for more of a meal; avocado slices; or a handful of blueberries for more color and nutrition! Get creative!
